There is an unexpected lingering creaminess and light vanilla sweetness (even if the wine is dry) long after the wine has been swallowed. Terrific intensity becomes even more evident the day after.
Ripe, herby citrus. Dry, crisp and stony but fruitier than classic Santorini Assyrtiko.

There is hint of green olive at the back. The wine is lean in character, but there is enough texture to pair with grilled fish drizzled in lemon juice and olive oil.
The varieties sort of cancel each other out – hard to discern the characteristics of any one variety, though perhaps that's the point. And the whole is fresh and lively.
This is a fragrant and lively wine that would drink nicely with seafood and easy salad combinations. Delicate mineral notes also appear, probably from the Assyrtiko.
